Well, according to their website, Prymal Coffee lists the ingredients as follows: Coconut Oil, proprietary KetoSweet, Coconut Milk Powder, Inulin (Chicory Root), Natural Flavors, Erythritol, Acacia Fiber, Sodium Caseinate, Sunflower Lecithin, Silicon Dioxide, and Himalayan Pink Salt Let’s talk about each one.
- Organic Coconut Oil: This is the base ingredient. Any creamer needs a rich oil base to make it thick, which this oil provides. You can get edible organic coconut oil from stores such as Walmart.
- KetoSweet is Prymal’s proprietary blend of sweeteners: erythritol, chicory root, monk fruit, and stevia. Although the ratios in the mix are a secret, you can get these very low-calorie sweeteners at your local department store or leading online marketplaces such as Amazon.
- Organic Coconut Milk Powder: used to add creaminess to the creamer, coconut milk powder is also an easy ingredient to come by. I particularly like Anthony’s Coconut Milk Powder, which can stand alone as a creamer if you don’t care to make yours sweet.
- Natural Flavors: Try vanilla beans—my favorite—cocoa powder and birthday cake flavors with your recipe.
- Inulin (from chives) is a soluble fiber that is known to promote digestive health. I am not sure which brand Prymal uses, but I like the organic inulin powder for its pleasant flavor and low glycemic index.
- Sodium caseinate: If you have ever made cheese, then this is a product that you are familiar with. I particularly like the Modernist Pantry one that I shop for online. It emulsifies and makes it possible to mix the ingredients used in this creamer.
- Acacia Fiber: A soluble fiber that is also easily accessible, acacia fiber helps promote metabolism and is good for your gut, making it a healthy ingredient to have in this mix.
- Silicon dioxide is used as a thickener and anticaking agent that also acts as a flavor carrier. You can get it in the baking products section.
- Sunflower lecithin: is a natural product that acts as an emulsifier. Sunflower lecithin is widely used in homemade plant milk and creamers, as I discovered.

These include French Vanilla, Birthday Cake, Salted Caramel, Butter Pecan, Cinnamon Dolce Cacao Mocha, Peppermint Pumpkin Spice, and Mocha. Everything is delicious and keto-friendly. If you want some subtle sweetness, the vanilla flavor will give you just that. However, if you want a spicy chocolate flavor, try the cinnamon cacao mocha.

Equipment
- Measuring cups
- Measuring spoons
- 3-quart saucepan
- Whisk
- Mesh strainer
- Stove glass jar for storage
Ingredients
- 13.5 oz of coconut milk
- 2 tablespoons of almond milk
- 3 tablespoons of coconut sugar
- A pinch of salt
- ½ pod vanilla bean
Instructions
- Shake to mix well the can of coconut milk. Pour the desired amount into a saucepan.
- Add and stir in the almond milk.
- Add the coconut sugar and salt to the mixture and whisk to blend.
- Place the saucepan on the stove and cook over medium-low heat until the mix starts to bubble and the sugar is dissolved. Do not let it boil. Turn off or remove the saucepan from the heat.
- Slice the vanilla bean in half lengthwise, scrape, and drop the seeds into the mixture. Throw in the pod and cover the saucepan. Stir and let the mix sit for half an hour.
- Strain your creamer into the storage jar using the fine mesh strainer. Discard the pods and seeds.
- You can store the creamer in an airtight jar in the fridge for about a week.

- I like almond milk as it ensures that the creamer does not set when stored and maintains a smooth consistency.
- In place of coconut sugar, I once used maple syrup with good results. Alternatively, you could use half honey and half coconut sugar.
- I used vanilla beans for the recipe, as they have a more potent flavor when compared to vanilla extract.
- Although you can use any salt, I prefer Himalayan pink salt for its usefulness in regulating blood sugar levels.
