To extract the coconut water, crack the coconut fruit by poking a hole on the soft spot of the shell using the knife. Pour the fresh coconut water into the jar.
Add the peach juice, passion juice and chilled tea into the water and stir to combine.
Cut the lemon and squeeze the juice into the mix for the extra flavor then add sugar for sweetening, stir and set the blend aside.
Put ice in the glass then pour the blend over the ice.
Cut the passion fruit and scoop the extract then add it into the drink. The seeds will float like a garnish. Stir gently with a straw to mix. I can feel the rich taste of this combination on my tongue as I write this down.
Let the drink sit for about 1 minute to cool in the ice.
