Grind the coffee beans to a medium grind, or about the same size as raw sugar granules.
Scoop the ground coffee into the pitcher and add the water.Stir to mix well.
Place the covered pitcher in the refrigerator to let the coffee steep for at least 20 hours.
Use the cheesecloth to strain the cold coffee concentrate into the clean storage jar. Avoid squeezing as this will make unwanted particles go through the cheesecloth. Strain again using a fine mesh strainer if you want a clearer strain(optional).
Place the covered storage jar containing the undiluted cold brew concentrate in the refrigerator, where it can be kept for two weeks.
To serve, pour over ice equal parts of concentrate and cold water. Add sweeteners as desired and enjoy!
